Take your packet of Fillo Pastry out of the refrigerator, still in its packaging, and allow it to come up to room temperature, approximately 2 hours before using.
When your Fillo Pastry is at room temperature, it should feel soft, pliable and ready to use.
Have all other ingredients prepared before you take your Fillo Pastry out of its packaging.
While working with your Fillo Pastry, cover with a dry tea towel to prevent the Pastry from drying out.
Keep refrigerated (not suitable for freezing).
Any leftover Fillo Pastry can be rolled up and sealed tightly back in its plastic bag, and stored in the refrigerator for later use.
